Eben,

Thanks for leaving a comment. This underscores the hospitality and friendly nature of everyone we met this past weekend. I am in constant amazement of the demeanor and openness of everyone we've met since starting this site. On our next visit, you can certainly count on us stopping by and trying some more of your creations.

Best of luck.
Cheers,
Marshall

PS - I used to fat washing technique to do my own bacon infused bourbon. Very good results! Thanks!

I can completely understand - I know how frustrating it can be when people just don't "get it". I'm glad to hear though that it was an honest mistake, and I'll give it another shot when we go back.

I guess now we have to start making more plans! :-)

Thanks for your comments,

SeanMike

Gentlemen,
I sincerely apologize for your poor introduction to the cocktail program at Tailor. You were quite right about the Agua Verde, my new barback had failed to remove the seeds from the habanero before juicing it and I had failed to taste the blazing hot batch before serving it to our guests. My bartender Troy was a bit defensive because that is his drink and the heat is the main source of complaint even when done properly. I do not want to add more excuses on top of those which were the source of your frustration but, I wanted to thank you for pointing out a problem that was remedied and thank you for sparing future customers of the same fate. I hope to see you when you are back in NYC, I can be found behind the bar downstairs Wed-Sat from 5-7 before I head up to do service. If I know you are downstairs, I can usually make time to say hello but, unlike most restaurants where the new guy works service, I believe the guests who are paying to dine should have their drinks prepared by the guy they read about in all that silly press.
